July 4 Burgers with A Twist
Chef Carlo Soranno to offer food demo in Port Washington.
Helping to celebrate Stop & Shop's grand re-opening in Port Washington, Chef Carlo Soranno will offer cooking demonstrations on Friday from 2 p.m. to 7 p.m. and Saturday, from 10 a.m. to 3 p.m.
On the menu: wagyu sliders – see the recipe below. According to Stop & Shop, the meat from wagyu is known for its "marbling characteristics, increased eating quality through a naturally enhanced flavor, tenderness and juiciness."
The increased marbling in the meat is said to improve the ratio of monounsaturated fats to saturated fats. Wagyu refers to several breeds of Japanese cows. The beef contains a higher percentage of omega-3 and omega-6 fatty acids than typical beef. A 4-oz. portion of ground Wagyu beef contains 330 calories, or about 83 calories per oz. In comparison, a 4-oz. portion of 95 percent lean ground meat contains 193 calories.

Chef Soranno's Wagyu Slider Recipe
Yield: 16 sliders

Cook time: 10 minutes
Ingredients:
• 1 teaspoon onion powder
• 1 teaspoon garlic powder
• 1 teaspoon ground black pepper
• 1 teaspoon kosher salt
• 2 tablespoon worcestershire sauce
• 2 tablespoon low sodium soy sauce
• 1 1/4 pounds ground Wagu beef
• 1 teaspoon canola oil
• 16 Martin’s party rolls, split in half
Special Sauce:
• 2 tablespoons mayonnaise
• 1 tablespoon ketchup
• 1 teaspoon yellow mustard
• 1 teaspoon relish
Preparation:
1. Place ground beef in a large mixing bowl and season with onion powder, garlic powder, black pepper, kosher salt, worcestershire sauce, and soy sauce and mix well.
2. Prepare the sauce by mixing the mayonnaise, ketchup, mustard and relish together. Place in the refrigerator until you are ready to serve.
3. Form the seasoned beef into 1.5 ounce burger patties. Place in the refrigerator until ready to cook.
4. Preheat a large non stick saute´ pan on medium heat or an electric griddle to 350 degrees. Place 1 teaspoon of canola oil in the pan or on the griddle.
5. Add the patties and cook them 3 minutes per side.
6. When you are ready to serve, spread 1 teaspoon of the sauce on the top of each slider bun. Place the burger on the bottom bun and enjoy.
